Cooking with Kids – Lemon Biscuits
This felt like a weird recipe to do as it wasn’t like biscuits I’ve made before, however, they were absolutely gorgeous! We doubled up on all the ingredients to make extra biscuits.
- 1 medium lemon
- 125g plain flour
- icing sugar
- 1 egg
- 100g softened butter
For the icing:
- 200g icing sugar
- 3 tablespoons icing sugar
Grease a baking tray.
Sift the flour and icing sugar into a large bowl.
Squeeze the juice out of the lemon.
Separate the egg, the egg whites aren’t needed. Put the egg yolk in with the flour and icing sugar.
Add the butter and a tablespoon of lemon juice and stir the mixture until it’s smooth.
Make the mixture into a bowl then wrap in clingfilm. Put it in the fridge for half an hour and preheat the oven to 190°C.
Dust the worktop with flour and roll out the dough to about half a cm thick. Use a cutter to cut into shapes and place on the baking tray.
Cook for 8-10 minutes until golden. Leave the biscuits to cool on the tray.
When cool mix together the icing sugar and lemon juice then ice the biscuits, if you can resist, leave them to set before eating!
